Bare bones taproom in a garage, hidden in an industrial park in Naperville. Its location and lack of seating don’t seem to deter visitors, as it was packed when we visited on the Thursday before New Year’s. There is a very small bar, dark grey walls, with an open view of the brewery operation; no televisions. No cash accepted, only debit or credit cards.
The head brewer is Tim Marshall, who has a passion for West Coast, Belgian, and barrel-aged beers. Ten beers on tap. Below are a few that we sampled. Note that there is a three beer limit per person.
BEER
FIBS American Lager (4.00) – Medium-bodied lager with low hop bitterness; malt character contains sweet aspects to make this beer more than a typical lawnmower beer
Funsponge Belgo-American Blonde Ale (4.50) – Medium body; superb balance between malt sweetness and hop bitterness; refreshing change from typical Solemn Oath beers
The Royal We Altbier (4.50) – Full-bodied malt sweetness; distinct, yet subtle, hop bitterness in aftertaste; outstanding example of the style
Nourri Au Fourrage American Milk Stout (3.75) – Full-bodied stout; somewhat lacking in roasted character; needs more creamy flavor to be an excellent milk stout
Pernicieux Belgian Brown Rye Ale (3.25) – Medium body and bitterness; balance of rye and other malts could be better; tastes more like a typical brown ale than a rye ale
FOOD
No food or complimentary snacks served. Food trucks visit regularly.
